Panko-Crusted Pollock Sandwiches

Whether you're serving fish sandwiches, fish sticks or an elegant fish dinner, this baked fish recipe will serve you well.

  • pounds pollock fillets, cut into strips

  • large, lightly beaten egg
  • Sea salt
  • Freshly ground black pepper

  • cups panko breadcrumbs

  • tablespoons seafood seasoning
  • 2
  • tablespoons olive oil
  • Olive oil spray
  • 4
  • hamburger buns
  • Tartar sauce (optional)
  • Lettuce
  • Serves 4


    1. Preheat oven to 475°F. Line a baking sheet with foil and coat with nonstick cooking spray. In a shallow dish season egg with salt and pepper to taste.
    2. In another shallow dish combine panko, seafood seasoning and olive oil. Dip pollock strips in egg, shaking off excess. Then roll strips in panko, pressing to coat evenly. Place on baking sheet. Lightly coat fish with olive oil spray.
    3. Bake 12 to 15 minutes or until cooked through. Place fish on buns, top with tartar sauce (if desired) and lettuce, and serve.
