Steelhead with Ginger Grapefruit Sauce

Fresh grapefruit adds a citrus highlight to the light ginger sauce over steelhead.

  • cups fresh grapefruit juice, divided
  • 1
  • tablespoon grapefruit zest
  • 1
  • tablespoon cornstarch
  • 1
  • teaspoon low-sodium soy sauce

  • tablespoons hot sauce
  • 3
  • tablespoons minced fresh ginger
  • 1.25
  • pounds steelhead fillets, skin removed, cut into portions

  • tablespoons minced flat-leaf parsley
  • Serves 4


    1. For the sauce, in a saucepan combine 1/2 cup brown sugar, 1 cup grapefruit juice, grapefruit zest, cornstarch, soy sauce, hot sauce and ginger. Set aside.
    2. Adjust oven rack to 4 inches from heat source. Preheat broiler. Line a baking sheet with foil. Place fillets on baking sheet. Pour remaining 1/2 cup grapefruit juice over top and sprinkle with remaining 1/2 cup brown sugar. Broil 5 minutes or until brown sugar caramelizes.
    3. Decrease oven temperature to 300°F. Bake fillets 5 minutes more or until fish flakes easily with a fork.
    4. Meanwhile, place saucepan over medium-high heat. Bring to a simmer; cook and stir until sugar dissolves.
    5. Transfer fillets to a platter, drizzle with sauce, sprinkle with parsley, and serve.
