  • 2
  • (4-ounce) frozen lobster tails
  • 2
  • tablespoons melted butter
  • 1
  • tablespoon fresh lemon juice
  • Freshly ground black pepper, to taste
  • 0.25
  • cup water
  • Serves 2

    1. Thaw lobster overnight in the refrigerator or 45 minutes under cold running water.
    2. Adjust oven rack to proper setting. Preheat broiler. Split the top of the lobster shells lengthwise with kitchen scissors. With a towel in hand, place lobster on towel and squeeze shell until it pops open. Lift the meat out of the shell, while still leaving it attached. Close the shell and let the meat rest on top of the shell. Lift up meat and with a knife, score the underside three times to prevent curling.
    3. Baste with melted butter and lemon juice. Season with pepper to taste. Place lobster on a rimmed baking sheet, shell side down. Add 1/4 cup water to baking sheet.
    4. Place lobster under broiler. Broil 8 to 10 minutes or until an instant-read thermometer registers 150°F.
